Temperature is the thing most recipes leave out

A recipe might say "heat oil in a pan" but never tell you how hot is too hot. Smoke points are the missing number. Once you know them, you stop scorching delicate fats and start using neutral ones where heat is the point.

High-heat cooking: use the right fat

Avocado oil, refined sunflower, and clarified butter all handle temperatures above 400°F without breaking down. Reserve them for searing, stir-frying, and anything that needs a very hot, dry surface.

Using extra-virgin olive oil here is the most common mistake. Its polyphenols — the compounds that make it taste good — are the same compounds that burn and turn bitter under high heat.

Low-heat and finishing: flavor is the job

Finishing a sauce with whole butter, drizzling good oil over a finished dish, or using sesame oil to season — these are not cooking moves. The fat goes on after heat, and its flavor transfers directly into the food.

This is where spending more on oil pays off. You taste it. In a hot pan, you mostly do not.

Cooking vs finishing oils

Which fat to use at what heat

A quick reference — match your cooking temperature to the right fat.

300°F

Gentle heat — 300°F / 150°C

Softening vegetables, making scrambled eggs, sweating onions. Use whole butter or extra-virgin olive oil. Neither fat is stressed at this temperature.

350°F

Medium heat — 350°F / 175°C

Sautéing, shallow frying, pan sauces. Refined olive oil, coconut oil, and standard vegetable oil are all comfortable here. Whole butter starts to brown.

400°F

High heat — 400°F / 200°C

Searing meat, roasting vegetables, stir-frying. Use refined avocado oil, grapeseed oil, or clarified butter. Extra-virgin olive oil does not belong here.

450°F

Very high heat — 450°F / 230°C

Deep frying, smoking a cast iron, wok cooking. Refined avocado oil or refined peanut oil. At this temperature the wrong fat produces bitter compounds and visible smoke.

Common questions about fats

The ones that come up in every conversation about cooking oils.

Yes, within limits. Strain it through a fine mesh after each use, store it in a sealed container away from light, and check it before reusing. Oil that smells off, is very dark, or foams when heated should be discarded. Most oils can handle two to three frying sessions before the quality drops noticeably.
Extra-virgin olive oil has a smoke point around 375°F, which is fine for medium heat but not for searing or high-heat stir-frying. Refined olive oil has a higher smoke point (around 465°F) and handles heat much better — it just lacks the flavor complexity of extra-virgin. Use refined for cooking, extra-virgin for finishing.
Smell it. Rancid oil has a distinct odor — often described as crayons, old paint, or stale nuts. The color may also darken and the oil may feel slightly thicker. If you are unsure, taste a tiny amount: rancid oil tastes sharp and unpleasant. When in doubt, replace it. Rancid oil is not dangerous in small amounts but adds off-flavors to everything you cook.
Ghee is butter with the water and milk solids removed through slow cooking. What remains is pure butterfat. Because the milk solids are gone, ghee has a much higher smoke point (around 485°F versus 300°F for whole butter) and a longer shelf life. It also has a more concentrated, nutty flavor. Use butter where its mild dairy taste matters; use ghee when you need the fat to handle heat.
No. Most home cooks need a neutral high-heat oil (refined avocado or grapeseed), a flavorful finishing oil (extra-virgin olive oil), and butter. A fourth oil — like toasted sesame or coconut — can cover specific cuisines. Anything beyond four is usually redundant unless you cook a very wide range of food. More oils means more chances for something to go rancid before you use it.
